I love flavored vodkas or infused vodkas, and the iced cake vodka combined with pineapple juice and maraschino cherries makes the liquid version of a favorite cake, pineapple upside-down cake cocktail. The drink is simple and delicious and always a favorite at girl's nights. So, if we are going to pick our calories, I will pass the cake up and go for this version of the pineapple upside-down cake cocktail.
This drink has been in my drink rotation since the very first nanny I hired, Mindy, introduced me to pineapple upside-down cake cocktail. At the time we were still milking cows, the kids were going to school 23 miles south of our farm and then I trekked 60 miles north of our farm to my off the farm job. I was tired and needed help. That is when I embraced the idea of a nanny. Any nanny who introduces me to new cocktails is a keeper. Trust me. She was a keeper. But, like most nannies, she graduated from college and left me. Abandoned me to drink alone. But, she was our first love and will always love her. And miss her.
As I sip on my pineapple upside-down cake cocktail, I am grateful for the easiness of this recipe. It is basic. One part iced cake vodka, two parts pineapple juice, maraschino cherries and a dash of cherry juice. If you want to be fancy, add whipped cream. But, by no means is it necessary.

Pineapple Upside-Down Cake Cocktail
Ingredients
- 1 ounce iced cake vodka
 - 2 ounces pineapple juice
 - 2 maraschino cherries
 - dash of cherry juice
 - Whipped Cream Optional
 
Instructions
- Pour vodka in a glass first.
 - Pour pineapple juice over top.
 - Drop the cherries in and follow with the dash of cherry juice.
 - Top with whipped cream, if desired.
